Macro Monday

All the summer berries are slow to ripen this year due to the amounts of rain and cool cloudy days we have had this summer.

Picking berries usually entails getting scratched by Nature's protective thorns.


Most of the berries though are still looking like this. Hopefully they catch up before fall comes and they just dry up and rot on the bush.

It was a beautiful warm sunny day last weekend for the Harrison Hotsprings Dragonboat Festival. Here are some photos of the races on the lake that day!

Tempt My Tummy Tuesday

I am constantly looking for different fresh cool salads that my Hubby will eat, ones that contain the various vegetables that he does like without just constantly making the same old, same old type salads. I found this recipe for Carrot salad and tweaked the recipe for the salad to the recipe I am going to share. I love the taste of Sesame but found the original dressing needed to be enhanced so played with the ingredients until I got what I wanted. 

CARROT SESAME SALAD

Combine matchstick Carrots, Red or Orange Peppers cut in matchsticks, and chopped green onions in a bowl.
You can actually add any vegetables you like such as sugar peas, cucumber, celery as long as your main ingredient is the carrots.
The more variety of vegetable, the better!!

Sesame Dressing:
1 TBSP. Rice Vinegar
1 TBSP. Olive Oil
1 TBSP. Sesame Oil
1 -1in. piece Grated fresh Ginger
3-4 cloves Grated fresh Garlic
1 TBSP. Toasted Sesame Seeds
1/4 tsp. Schirachi Chili Sauce
2 TBSP. Tahini
Salt and Pepper to taste.
Mix all ingredients together thouroughly.

Pour dressing over salad and garnish with 1 TBSP. Toasted Sesame Seeds and chopped green onions.
Can be mixed ahead of time so that flavours are allowed  to mingle.

Mellow Yellow Macro Monday!


The sun is finally here, at least for two days, and what better flower to show but a Sunflower!
A different perspective from the back of the Sunflower.

Our weather is set to change again tomorrow, the clouds are supposed to come back along with the rain and the cooler temperatures. Our summer has been unusually cooler and cloudy for most of the season. I for one am not minding the cooler temperatures. Once it gets above 25 Celcius or so, I have trouble dealing with it. It just makes me sluggish and tired. So summer can stay on the cooler side as far as I am concerned!!

Tempt My Tummy Tuesday

I just discovered this meme and I couldn't be more excited! A place to share some of my recipes and direct my friends and family here to check out my latest creations! I am always on the lookout for fun, delicious and different recipes and I always seem to have people who are willing to give them a try!!
This one came about thinking of Pizza but not wanting to have the crust that comes with it.

SMASHED CRASH POTATO PIZZAS.
Start with small New Potatoes. Wash and parcook potatoes until soft but still somewhat firm enough to hold thier shape.

After parcooking, coat potatoes in Olive Oil, and place on foil lined baking sheet.

Using a Potato Masher, apply enough pressure on the top of the potato to smash it flat!! Try to make sure it keeps a lot of its shape though. There is still stuff to go on top of it!

Sprinkle each potato with Salt, Fresh Ground Pepper and Italian Seasonings to our taste.

Add a dollup of Spicy Salsa on top of each potato.

Sprinkle fresh cut Green Onions over each potato.
Cover each Potato with a generous amount of Old Cheddar Cheese.

They are now ready to go into the oven.

Preheat your oven to 400 degrees.
Cook on middle rack in the oven for about 20 minutes or so or until the Cheese is browned and bubbly and the potato is crispy.

They kind of remind me of little Pizzas!

I served them with a fresh Green Salad.

A Very Mellow Yellow Macro Monday

I have been featuring photos from Hilda's Tribute Garden, which we visited a couple of weeks ago. She had garden signs all over her garden which she designed and painted herself. Her hubby did the metal work for each sign. Here are just a sampling of some of the signs in her garden.
